One of Tallahassee’s finest dining experiences, the Ashby Stiff Little Dinner Series has been a best-kept secret of local foodies since 1958. Each semester, senior hospitality students work with professionals to create a series of themed, international four-course dinners as an extension of their catering management course.
Each dinner takes place on the fifth floor of the University Center Club, which is decorated to match the dinner’s theme. The evening begins at 6:30 p.m. with a 30-minute cocktail reception including specialty drinks and three types of hors d’oeuvres.
At 7:00 p.m., diners are seated for an exquisite four-course dinner — appetizer, soup or salad, entrée and dessert — with two wine pairings. Cost of the evening: $45, all inclusive; no tipping.

Since 1958, students at the Dedman School of Hospitality have gained valuable experience by applying coursework in food service management to this fine dining series named for the late Ashby Stiff.
Ashby Stiff was a professor at the Dedman School of Hospitality for 44 years. He directed the highly popular Little Dinner Series as a laboratory extension of his classroom for 25 years. Stiff served as food critic of the Tallahassee Democrat newspaper for more than two decades, garnering a loyal readership and local celebrity.
Today, hospitality majors continue to create, manage and implement themed dinners in the Little Dinner Series as part their required senior-year catering management course. Training and working with a professional chef and a front-of-house manager, students spend the semester learning the methods and concepts utilized in the food and beverage industry.
